Woman's Day|27 June 2016Hi everyone!I have a little mirror on my desk at work, and last week while I was plucking one strand of grey hair after another from my head (in the ridiculous hope they will never grow back again), I was busted by our photo editor Patty, who had been watching me the whole time. Awkward! At the age of 39, I’m not quite ready for a full head of grey, although having seen how Nicole Kidman nails the look for Jane Campion’s TV series currently shooting in Sydney (p18), I’ve gotta say I’m inspired! Speaking of ageing gracefully (or not), there’s an overload of celebrity surgery shockers at the moment, with Barbra Streisand and Meg Ryan barely recognisable at the Tony Awards (p32). In a medium bowl, whisk 2 cups milk, 3 eggs, ½ cup cream, ¼ cup caster sugar and 1 tsp vanilla extract together until well combined. Layer 12 roughly torn mini croissants in a six-cup casserole dish. Lightly grease a large shallow baking dish. 2 Heat chargrill pan on high. Brush chicken with a little oil and season to taste. Chargrill 3-4 minutes, each side, until sealed and lightly browned. Heat a heavy-based frying pan over high heat. Add enough ghee to saute 200g thickly sliced field mushrooms until softened, then season with salt and pepper and transfer to a bowl. Add 8 sliced spring onions and 1 finely chopped garlic clove to the pan and saute until fragrant. Return mushrooms to the pan, add 2 sprigs thyme and stir well. Pour 8 lightly beaten eggs over vegetables and stir for 1 minute or until it starts to set on the base of the pan. Sprinkle with ½ cup parmesan.
